Happy Wednesday, Friends!
I want to make sure I chronicle my DI experience, but have decided to make an entirely separate page for that. That said, I need to figure out exactly how to do that, so stay tuned! Until then, here is a brief update for ya! Monday was a BUSY day, but full of productivity (which I love). I was at my internship from 8-5 and then headed to Dallas for class from 6-8. I was thinking traffic was going to be awful but I was pleasantly surprised. Praise. Since I knew it was going to be a long day, I decided not to go for my morning walk and take advantage of the extra sleep! ‘Twas a good choice! Yesterday (Tuesday) felt like a half day since I finished up at 5. It’s the little things, y’all. I sat in on interviews and an orientation, worked on a promo for one of the new school meals (a spinach side salad!), reviewed/edited the FWISD HAACP document and joined one of the dietitians for her meeting with a few foodservice managers regarding the Kickstart Breakfast Program, a program that provides breakfast in the classroom for the kiddos. It is amazing to see all of the little details that go into making Child Nutrition Services what it is. These dietitians work HARD and do an AMAZING job!
After heading out for the day, I stopped by Target to pick up almond milk, Greek yogurt, and dark chocolate…you know…the essentials 😉 I then came home and made Pinch of Yum’s Sweet Corn & Zucchini Pie to have on hand for those busy nights.
Soooo I didn’t get any food prep done over the weekend like or I had hoped, but I was super productive! I also prepped the delicious dish above yesterday, so it’s all good. I moved into my new room, met up with a friend for coffee (more on that in a sec), met another friend at the farmers market, and meal planned for a school assignment.
Now, let’s talk about the coffee. Saturday morning, I met my friend, Kayla, at a local coffee shop. She was working on some assignments, so when she sent out a group text to see if anyone wanted to join, I grabbed my laptop and books and headed that direction. I tend to be a hermit on the weekends, so made a point to be social! Now, normally I am the boring person that will get a water bottle instead of coffee or tea, but once I realized almond milk creamer was an option, I had to give it a try. To give you a little background, I haven’t had coffee in 3-4 years. I know that is absolutely shocking to many, but I realized after years of drinking it, I didn’t really like the flavor, but rather the idea of coffee. There was really no point in bringing my school books and laptop to work on because I was so wired, that I didn’t even finish a single question during my 2 hours at the coffee shop. I don’t think Kayla did either ;). Oops. Anyway…still not a fan, but definitely know what to do on those long internship days when my eyes begin to feel heavy.
