This weekend was super relaxing that included some fall baking and cooking. First up was Laura Lea’s Pumpkin Spice Bars. I posted about these over the weekend, but wanted to tell you just how amazing they are. I have been enjoying these bars of deliciousness with my green smoothie at breakfast and as a snack. Even though they have a coconut butter drizzle, I have also been adding a dollop of peanut butter because…can you ever have too much nut butter? I didn’t think so.
I am absolutely loving Laura Lea’s recipes and tried her Hidden Veggie Mac N’ Cheese for quick dinners/lunches throughout the week. I served it over top broccoli for an extra punch of veggies and…you guys! Best. Dish. Ever. It is creamy, cheesy, and feels oh so indulgent. You better believe I will be enjoying this bowl of deliciousness for lunch today.
On Saturday, I went shopping with my friend, Emilee at Southlake Town Square. I had never been before, and had so much fun! It was also Oktoberfest, so there were so many adorable dachshunds walking around, vendors, food trucks, and more. The pups were definitely a highlight. We stopped for lunch at Pure Cafe, where I ordered the Veggie Sandwich on 7-grain bread with a side of fresh fruit. It was definitely tasty, but nothing to write home about.
On Sunday, I slept in until 11:30! What?! As someone who wakes up between 5 and 6 during the week, sleeping in until 8, much less 11:30, is unheard of. Needless to say, I missed church, but realized my body probably needed the extra sleep. By the way, having lunch as the first meal of the day feels wrong. I was in quite the predicament when it came to deciding whether or not I should skip lunch and have breakfast or skip breakfast and have lunch.
Today, one of my fellow interns and I are presenting a PPT on updates to HACCP to all of the FWISD cafeteria managers…all 133 of them. I am super nervous because public speaking is not my forte, but also relieved I don’t have to do it on my own! Fortunately the presentation is at 8:30, so I don’t have much time to worry. Phew!
