I’m back from my first ever FNCE and had So. Much. Fun. It was 3 1/2-days packed with fun and excitement, so I will break it down over the next couple of days.
Goodbye Fort Worth, Hello Chicago
I was up bright and early Saturday morning to catch my 6am flight. I had my alarm set for 3am, but was too excited to sleep, so…
Pumpkin Spice Chia Oatmeal Cups!
I made these little cuties for a quick airport-friendly breakfast and figured they would travel well, too! I need to modify the recipe slightly before posting, but stay tuned!
I headed towards Dallas and parked at a friend’s apartment before getting an Uber because #dieteticintern #budgeting.
After a short flight to Chicago, I Uber’d to the hotel, checked-in, showered, and took a short nap before heading to the Siggi’s Brunch event!
Siggi’s Brunch Event
To say I was exited for the Siggi’s event would be an understatement. Y’all. It was AMAZING! Ellie Krieger, Jaclyn London, and THE one and only Siggi spoke on entrepreneurism while the attendees indulged in one of the best brunches I have ever had.
Can we please take a second to notice the Siggi’s Triple Cream Chocolate yogurt? If you have yet to taste this deliciousness run (don’t walk!) and purchase this flavor ASAP. You won’t regret it.
All of the recipes provided at the brunch were created by Siggi’s ambassadors, which was so neat! They were also all amazing, so I was thrilled to have a copy of the cookbook!
I also came across a few of my favorite bloggers at the event, Robyn, Alexis, and Meme. I was initially too nervous to talk to them, but, fortunately, I ran into them again at a little deli across the street and was able to muster up the courage to talk to them :). They were so sweet and easy to talk to! I was even able to chat with Robyn and Meme on working with eating disorders as a dietitian. Since working with eating disorders is where my heart is, I loved having the opportunity to learn from them!
After fan-girling for a moment, I explored the city for–and made a pit stop in Anthropologic and Nordstrom Rack ;).
I discovered there was a Sweetgreen nearby, so I was determined to find it! After getting in some serious steps, I arrived at Sweetgreen to find out it was their taste test day! Score! I got the new Curry Cauliflower Salad…for FREE! It was definitely a welcome surprise!
With my salad in hand, I walked back to the hotel. I Uber’d to the event, but since it was a beautiful day, I decided to walk back and take in the city. While it was a bit of a trek back to the hotel, the city of Chicago was absolutely beautiful and I loved being outdoors.
Once back, I put my salad in the fridge for later and freshened up before heading to the opening ceremony for FNCE.

Upon arriving at the opening, I ran into my boss from Ben E. Keith, Lauren. The dietetics world is so small! Since I had come alone, it was so nice to see a familiar face! I was thrilled to have someone to explore the expo with!
