Happy Friday!

I am back with more FNCE details for y’all–starting with me and my favorite yogurt 😉

Sunday morning, I woke up a headed for the gym.  PSA: the gym fills up QUICK when you are at a conference full of dietitians RD2Be’s!  After a good elliptical workout, I headed back to shower and get ready for a fun-filled day of FNCE!

I fueled up for the day with Muuna–AKA the BEST cottage cheese ever!

I am not usually a fan of fruit in my cottage cheese, but the mango was so good!  I also picked up a Starbucks English muffin with egg white and cheese to keep me fueled for a busy day ahead.

Samples, Samples, Samples

In hindsight, I probably should have had breakfast in the expo because #samplesfordays.

I was so impressed by the ZUPA soups! They literally taste like Thanksgiving in a cup…which I could have totally used when I had my wisdom teeth removed!  Of course, I went straight for the Pumpkin Cinnamon Sage flavor.  I am definitely going to be giving these a try when the cold weather hits Texas ;).

This little combo was AMAZING! Topped with chia, pumpkin seeds, and coconut chips, you simply could not go wrong. I fully admit I may have had more than one over the weekend ;).

I have been using Kodiak Cakes for the past few years and I absolutely adore them! In addition to the tried and true flavors, I had the opportunity to try the new seasonal flavor–PUMPKIN FLAX! If fall were a pancake, it would be a Kodiak Cake.

I tried this tasty little beverage for the first time and let me tell ya…I’m a fan!

Have y’all ever seen the pure gold that is AVOCADO HONEY?! I thought it was such an interesting flavor for honey, but oh my goodness! I am hoping a local farmer’s market in my area sells this flavor.

Betsy’s Best nut butters. The name basically speaks for itself.  This was my first time trying the brand and I will definitely be adding this to my cart in the near future.  The butters were creamy, flavorful, and delicious. I tried a sample on a cracker

This sorghum risotto is currently on my list of things I must recreate ASAP.

Yup. These are already on my grocery list.  I am always hesitant when it comes to buying canned tuna, but SafeCatch won me over.

  I wasn’t the biggest Lacroix fan, but after trying a new-to-me flavor, I may be giving them another chance!

Califia was providing samples of there beverages and since I purchase and have tried 2 of the varieties, I decided to sample the Cold Brew. I figured, if anything, it would give me a boost of energy! I don’t even drink coffee and I am seriously rethinking my life decisions right now.

Each day, various booths made different recipes using their products.  For example, the sorghum and lentil booths had multiple new dishes to sample each day.  On one day, there was sorghum risotto and lentil meatballs.  On another, there were sorghum breakfast bowls and a lentil Greek salad.  I loved seeing the endless options of tasty twists!

It’s Kind of Like The Nordstrom Anniversary Sale…

The best way for me to describe FNCE is like the Nordstrom Anniversary Sale–Nutrition Edition.  After sampling and exploring the expo for a until lunchtime, I headed downstairs to a culinary demonstration of “Cooking Essentials for Every Dietitian” with Ellie Krueger and Tessa Nguyen. It was a challenge to tear myself away from the expo, but I was excited to attend my first FNCE session.  Tessa did a great job at breaking down a few of the key kitchen gadgets every cook needs and how to prepare nutritious foods that are quick and delicious!

After the culinary demo I met up with one of the interns at FWISD to explore more of the expo and hang out in the cranberry bog…


After stocking up on more goodies than I knew what to do with, I went back to the room to relax and get ready before heading to the Hyatt Regency Chicago for a Texas Academy of Nutrition & Dietetics networking event. The event was in a bar, which was awkward at first, but I met a couple of students who felt just as awkward and out of place, so I had the opportunity to chat with them for a bit.  Shortly after, Lauren and her friend Megan arrived, so I felt much more at ease!  I was introduced to retired and current RDs, including a girl who also completed her dietetic internship through ACU!  I also got to see one of my former professors, Ms. Powell (now Mrs. Davis), and take a photo with her, Lauren, and Megan.  We all graduated from TCU Nutritional Sciences Department, so naturally, we made sure to take a picture 🙂


By the time we were getting ready to leave the event, I was craving a somewhat substantial dinner.  Despite the cold and rain, Lauren, Megan, and I hustled over to Whole Foods for a bite to eat. It was so much fun chatting with Lauren and getting to know Megan. Even though I was exhausted by the end of the night, I had so much fun!
