2018 So Far…RECENT Eats & IT SNOWED!
Hi Friends! I hope everyone’s 2018 is off to a great start! I must say the year is off to a GREAT start and I am so excited for all God has in store for me this year!
In typical RD2be fashion, I have been spending time in the kitchen make all sorts of yumminess! I have also been enjoying our FIRST SNOW of 2018!
Creamy Goat Cheese Broccoli Pasta – Made with my all time favorite pasta, Banza, creamy goat cheese, steamed broccoli, baby bella mushrooms, garlic, lemon juice, and parmesan, this simple dish was so cozy and hit. the. spot. It even received the approval of my brother-in-law, so I’d say it’s a keeper 🙂
Asian Salad from Bay Local. SO GOOD!
Kodiak Cakes with banana slices and a side of Food & Nutrition Magazine…don’t worry, I didn’t have snap peas with my pancakes 😉
Fish tacos – made with pico, avocado, Greek yogurt, lime, cod, black beans, brown rice, and spicy blue corn tortilla chips.
Avocado toast – Ezekiel bread, avocado, fried eggs, Trader Joe’s Everything But The Bagel Seasoning. If y’all haven’t tried this seasoning, RUN to your nearest TJs. It is amazing!

Kodiak Cake blueberry waffles. You guys…I never thought to put the batter into a waffle iron, but game. changer. Why had I not thought about this sooner?! After all, it is a pancake AND waffle mix. Ha. Silly me.
IT’S SNOWING! Being from the beach, it isn’t often that we get a snow storm, but on Thursday morning, we woke up to a winter wonderland. SO exciting!
I am off to my grandparent’s house to make homemade pizzas and enjoy the snow! Stay warm all you East Coasters!
